It’s not that often that I get really excited to share soup (except this one).

Of course the chocolate and peanut butter desserts always get all of the attention and if I could feed my family on those desserts alone I would.

But apparently that’s frowned upon so I’m always searching for dinner ideas.

I’ve made this easy soup three times to get it just right. I’m telling you my kids licked their bowls. Even my 2-year-old. The whole family loves it.

The base of this delicious lasagna soup is made from tomato paste, diced tomatoes, and tomato sauce in a large pot. You could use crushed tomatoes if that’s what you have.

The coolest part about this lasagna soup is that you boil it all in one pot! I’m all about making your life easier.

Take regular lasagna noodles and break them into pieces. You want to break it into smaller pieces, about 1-1.5 inch pieces and toss them in the soup pot.

Remember they will expand when you cook them. To be honest, you could use any type of pasta.

But you must top it with this ricotta/Parmesan mixture. It’s the lasagna in this Lasagna Soup.

Y’all. Pictures don’t do this bowl of soup justice. It’s sooooo good with rich tomato broth and tender noodles. It’s like traditional lasagna but in soup form.

Top with fresh parsley or basil. Serve with garlic bread.

This easy Lasagna Soup recipe is one of my favorite soups! Imagine a soup with beef, garlic, onion, and tomato sauce with tender lasagna noodles throughout.

Ingredients

  • 1 pound lean ground beef, (Italian sausage can be used)
  • 1 cup diced onion
  • 3 garlic cloves, minced
  • 2 (14.5 ounce) cans diced tomatoes, undrained
  • 1 (8 ounce) can tomato sauce
  • 1/4 cup tomato paste
  • 4 cups (32 ounces) low sodium beef broth (chicken broth can be substituted)
  • 2 teaspoons Italian seasoning
  • 6 uncooked lasagna noodles, broken into 1 1/2 inch pieces (about 6-8 ounces; see Note)

Cheese Topping:

  • 8 ounces 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon salt

Instructions

  • In a large Dutch oven or saucepan, brown beef and onion over medium-high heat. Add the garlic and cook for about 30-60 seconds. Drain.

  • Stir in the diced tomatoes, tomato sauce, tomato paste, beef broth, and Italian seasonings. Bring mixture to a boil and stir in lasagna pieces. Reduce heat slightly and cook for about 10 minutes or until noodles are tender. Season with salt and pepper to taste.

  • For the Cheese Topping: In a small bowl, mixture together the ricotta, Parmesan, and salt.

  • To serve, spoon soup in a bowl and top with a dollop of the cheese mixture. Garnish with chopped parsley or fresh basil if desired. To eat, stir in cheese mixtures and enjoy! Store leftovers in an airtight container in the fridge.

Notes

You can use any small shaped pasta in place of the lasagna noodles just use about 2 1/2 cups. The lasagna noodles really give it that authentic texture.
Also, if you are making ahead of time it would be a good idea to boil the lasagna noodles separately and then add them before eating. The lasagna noodles really soak up the liquid if they sit in the soup for a while. You can add some beef broth if you need to thin it out.

    Could I make the sauce ahead, then before serving bring it to a boil and cook the noodles in the sauce?

    Used veggie broth, left the meat out and added julliened carrots (at the beginning) and chopped fresh spinach (at the end). Kids liked it, will make again. Possible word of caution… my husband bought the oven ready lasagna and I feel like it took a lot longer to cook than anticipated? I have no idea if that made a difference or not. I have never quite understood how the oven ready stuff is supposed to work but both times I have tried using it in actual lagasna it seemed like it didn’t get soft enough. But I didn’t think to tell my husband to try to get normal lasagna if they had it. I will have to try again with regular lasagana next time and see if it makes a difference. Very flexible recipe, depending on if you like meat or veggies.

    Great recipe! I loved that it was quick & easy to make.
    My variation used turkey meat & chicken broth. I didn’t have a can of tomato sauce, but did use one 6 0z can of tomato paste and it tasted delicious! I’m vege conscious so I slipped in some cauliflower while using only 4 lasagna noodles. One of those nights where I was just making do with what I had available and it worked out well.

    I am certainly going to try this recipe soon. It looks delicious. I think I’ll put the servings in ovenproof bowls, put the cheese on top, and run them under the broiler for a minute or so. I’ll take a picture!

    Excellent recipe! Love the chunky tomatoes! I used lasagna casserole noodles I found at Winco which worked just as well. I also added a side of steamed broccoli. I have so much leftover, I now have meal prep for the week. Thank you for sharing!

    I was lucky enough to stumble across this recipe. We are making it tonight for the second time, due to my son’s request! First time, I omitted the tomato paste and added extra tomato sauce. Also, I forgot to get beef broth and used chicken broth instead. Tonight, we are making it as written. However, I am allowing the soup to simmer for 40 min, with a bay leaf, before I turn up the heat and add the noodles. I just know it will be even more delicious than the first time.     Found this recipe via some IG reels of similar recipes and this one didn’t disappoint.

    I followed the recipe with only a few substitutions– my sister doesn’t like onion so I used leek, I didn’t have tomato paste so I omitted, and I added the ricotta and parm directly to the finished soup and pre-made it for the week (the noodles didn’t absorb the sauce/broth that much). This is hearty and rich, but delicious!

    I saw someone on IG make lasagna soup about a month ago and have been wanting to try it. I found this recipe and like how easy it appeared. I made it for dinner tonight and it was a hit! My very picky 6 year, that eats 3 bites and is done, ate 2 bowls. I was shocked. The store didn’t have regular lasagna noodles so I had to use the ready to bake ones. They worked out just fine. I honestly wouldn’t change a thing about this recipe. My 12 year old asked me to make sure I printed it and put it in my recipe book, which I did! Thank you for such a great and easy new family favorite.

    HI, I’m new to your sight. I did not see a Nutrition chart. I need to know the sodium level per serving. On a restricted diet.
    Your recipe looks and sounds wonderful. Had a dear friend in Minnesota who prepared a Lasagna Soup. Unfortunately, never got her recipe. It was delicious! Thanks for sharing.

      It’s at the bottom of the recipe card. It says SODIUM: 964mg but that will vary greatly with the brands you use so I would suggest using MyFitnessPal.

      If you are still looking for ways to keep your sodium low, try making your own chicken stock. Mark Bittman’s quick chicken stock recipe is super quick and easy. I make mine without salt then salt portions to taste as needed when cooking. Muir Glen also makes no salt added diced tomatoes and tomato sauce, unsure about the tomato paste. I also like to cook with Diamond Crystal Brand Kosher Salt as it is super flavorful, but contains less sodium then table salt. I find myself needing less salt.

      I used a jar of pasta sauce in place of the canned tomatoes and blended it first so there are no tomato chunks, we have the same problem in our house!

      I’m not a fan of big tomato chunks myself although I have gotten less adverse to them as I have gotten older. I like my spaghetti sauce to be smooth and will blenderize it if needed (although I prefer del grosso brand for lack of chunks). In other things, I usually I use petite diced or crushed and that’s smooth enough for me… if all I have are big chunk tomotoes I throw them in the blender.

      I feel like subbing sauce or paste for the chunks would result in too thick of a broth but whizzing the tomatoes smaller works great.

    This was delicious and perfect for our cold bitter nights dinner. It was super easy to make. I did add fresh basil to the top of the cheese topping which was pretty but also an addition I wouldn’t do without. It added a great fresh flavor. Also- I used ground turkey instead of ground beef and my hubby never knew! Add a salad and/or calzone and it would make a perfect meal to bring to someone!

      Ricotta is kind of an essential to lasagna but you could use cream cheese or sour cream.

    I was really disappointed in this soup 🙁
    I saw this recipe and couldn’t wait to try it. It looks so good and sounds good but we did not think it tasted good at all. It was edible but far from good. I wasted a lot of food unfortunately.

      You’re totally right. They don’t sell it online. I would check your local grocery store. You can use other ricotta but I do prefer BelGioioso.
