One of the best and easiest desserts to make this holiday season is this no bake dessert, Eggnog Eclair Cake. It has those warm and nutty eggnog flavors, so it will be perfect for the eggnog lovers in your life.
This eggnog cake is an easy icebox cake with the play on a classic eclair covered in chocolate ganache but without cream cheese needed for the creamy layer because of the use of a dry pudding mix.

Ingredients used to make Eggnog Eclair Cake:
- Vanilla instant pudding mix
- Eggnog
- Whole milk
- Cool whip
- Graham crackers
- Chocolate frosting
How to make Eggnog Eclair Cake:
- Mix the instant vanilla pudding mix, eggnog, and milk in a large bowl. Blend everything together with an electric mixer for about 2 minutes then fold in the Cool Whip until you see some stiff peaks.
- Spray a9 x 13 inch panwith non-stick spray. Place a single layer of graham cracker squares on the bottom of pan. (I had to break some graham crackers in half to fit along the edges).
- Top the graham crackers with half of the pudding mixture (creamy eggnog layer).
- Cover the pudding with another layer of graham crackers, and then top with the remaining pudding mixture and the final layer of graham crackers.
- Carefully spread the frosting on the graham crackers for the top of the cake. (Microwave frosting in the container for about 30 seconds and it will be a lot easier to spread)
- Chill over night or for at least 8 hours.
Do I need to use eggnog?
No! You can make this without using egg nog. We just love to use the eggnog taste for the holidays, but it will be just as delicious without it.

How to store this delicious recipe:
When you are not serving this simple dessert, either place the lid on the pan or some plastic wrap and keep it in the fridge to keep the fresh cream players from getting warm.

Ingredients
- 6.8 ounces instant vanilla pudding mix 2 (3.4 ounce packages)
- 2 cups eggnog
- 1½ cups milk
- 8 ounces cool whip 1 container
- 1 pound graham crackers 1 package
- 16 ounces chocolate frosting 1 container
Instructions
Mix the pudding, eggnog and milk in a bowl. Blend together for about 2 minutes then fold in the Cool Whip.

Notes
- It also tastes delicious when you let it sit in the fridge for an extra hour or two, because the graham crackers soften up, and have the best texture.
